At PURE Canadian Gaming, we are Alberta’s largest casino operator with over 1,200 employees in four locations in three cities. In addition to the gaming business, we have an active food and beverage division including bars, restaurants and live entertainment at each of our locations. We are currently recruiting for an Executive Chef to oversee our Casino Calgary location in all aspects of food preparation.
The Executive Chef will assist the Sr. Operations Manager in providing excellent quality and presentation of all food to our guests and will be a key member of our culinary team.

Responsibilities
Plan and direct food preparation and culinary activities
Modify/create menus that meet quality/cost standards & ensure consistency of recipes
Estimate food requirements and food/labor costs
Supervise and train kitchen staff
Arrange for equipment purchases and repairs
Recruit and manage kitchen staff
Rectify arising problems or complaints
Give prepared plates the “final touch”
Be present in kitchen and dining room during peak meal periods
Perform administrative duties including ordering, scheduling and invoice coding
Ensure Culinary team complies with all Provincial sanitation & food safety standards and regulations
Manage schedules and complete payroll records
Execute BEO and banquet functions including internal player parties
Maintain a positive and professional approach with coworkers and guests
Other duties as assigned
Requirements
4+ years of experience as an Executive Chef or Sous Chef
Excellent record of kitchen management
Ability to spot and resolve problems efficiently
Capable of delegating multiple tasks
Communication and leadership skills
Keep up with cooking trends and best practices
Working knowledge of various computer software programs (MS Office, restaurant management software, POS, inventory control)
BS degree in Culinary Arts or related certificate preferred
