Length of Contract: October, 2016 to June 30, 2017

Position Description:

Reporting to the Food Services Coordinator (FSC), the Culinary Coordinator will coordinate the daily food production tasks and duties for food services and be responsible for all culinary systems and policies. Responsibilities will also include culinary training of staff and executing catering events as required ensuring compliance with all legislated health & safety standards, coordination of inventory products, equipment maintenance requirements, safe food handling, customer service and safe operation practices.

Accountabilities:

  • In consultation with the Food Services Coordinator, coordinate activities of food services staff team
  • Provide work direction, training and mentor food service employees
  • In conjunction with the Food Service Coordinator, coach and assist employees in relation to station efficiency/cooking techniques and new skills and procedures as needed
  • Coordination of daily food production, menu and brand development
  • Coordinate ordering of inventory, supplies and general inventory planning/use/reporting
  • Implement and develop all necessary culinary and kitchen systems
  • Assist in food service staff scheduling for concessions, restaurant, special events, catering functions
  • Product ordering, monitoring and receiving inventory/products when required
  • Enforce and prevent over/under production and food waste
  • Food safety management and training
  • Food cost accountability and maintain budgeted food cost percentage
  • Product re-costing and price increases as directed by the Food Service Coordinator
  • Track and report daily issues with production teams performance
  • Practice safe and sanitary food preparation and service techniques
  • Hands on food preparation, presentation technique, and adherence of quality standards
  • May, at times, be required to lift boxes in excess of 50 lbs
  • Communicate with customers, clients and employees in a professional manner

Minimum Qualifications:

  • Grade 12 high school diploma
  • Red Seal Cook certification or equivalent
  • Basic food handlers certification and WHMIS certified
  • Formal culinary training is an asset
  • Minimum of 3 years’ experience supervising and providing direction to employees in a food service environment
  • Knowledge of POS systems and operating procedures
  • Excellent communication skills (written and oral)
  • Previous experience in implementing new systems and best practices in food services
  • Excellent training delivery skills
  • Excellent customer service skills with a friendly, courteous and positive attitude
  • Ability to work well in a team environment; excellent interpersonal skills; outgoing
  • Ability to respond and quickly adapt to changing business needs
  • A valid class G drivers licence
  • A satisfactory police records check
