POSITION SUMMARY

The Chef’s Assistant (CA) is responsible for assisting the both the Chef and Pastry Chef in performing their duties. The CA is a food oriented position and dedicated to helping address all the individual guest needs, special requests as well as stocking/inventory of the lodge food program.

The CA’s role is to work closely with the kitchen team and be involved in all food related tasks. With time spent working alone or with a kitchen team member, the CA will strive to develop skills and knowledge in the kitchen setting.

With a strong understanding of guest expectations balanced with teamwork and excellent organizational skills, the CA will be a major part of the culinary team. They will be expected to work hard and be a part of a kitchen team that strives daily to produce food that meets CMH standards.

All positions at CMH have a close interaction with our guests on a daily basis and must reflect the professional and hospitable nature of the company.

This is a summer seasonal opportunity at our CMH Bugaboos Lodge with the possibility of winter seasonal employment.

AREAS OF RESPONSIBILITY:
In-depth working relationship with the Chef & Pastry Chef and on-going involvement with the Area Management team and CMH Area staff

Food Preparation:

  • Under the supervision of the Chef they will help prep and assist in the creation of meals.
  • Participate in menu planning, ordering and receiving
  • Play a major role in providing kitchen support when guests return from the field

Kitchen Responsibilities:

  • Be punctual and show attentiveness to kitchen timing
  • Demonstrate tidy grooming and professional appearance(ie wearing clean whites in the kitchen)
  • Display safe levels of kitchen skills (food handling, knife handling, meal plating)
  • Understand and maintain accurate kitchen stocking and dry storage rotation

Guest/Employee Satisfaction:

  • Reach out to the guests to fulfill requests and gather feedback on food related items
  • Work together with the kitchen team and other lodge staff to develop an interactive environment for guests and staff in the lodge

Task Management

  • Able to efficiently manage numerous tasks on a daily basis within the time constraints of the day
  • Willingness to assist other members of the lodge team when needed
  • Radio Duty: is a scheduled task and required by all CMH Lodge staff
  • Daily cleaning tasks in work space

Safety/Regulatory:

  • As per Food Safe Certification guidelines, understand and follow all food safety standards
  • Understand and demonstrate good kitchen safety practices
  • Demonstrate safe workplace cleanliness
  • Radio Duty: is a scheduled task and required by all CMH Lodge staff

EDUCATION & EXPERIENCE REQUIREMENTS

Education:

  • High School Diploma
  • Carry a valid Food Safe Certificate

Experience:

  • Industry kitchen experience
  • Food preparation experience

Knowledge, Skill and Ability Requirements:

  • Detail oriented with an ability to simultaneously work toward big picture goals and priorities
  • Excellent communication skills – able to receive and act on feedback in an effective manner

TRAVEL REQUIREMENTS

This position is remote based and employees are required to find their own way to and from the lodge or helicopter pick up. If available CMH does have regularly scheduled guest transport that employees can pre arrange with the CMH Transportation Department. CMH transportation arrivals and departures are predetermined for location, dates and times. CMH guests have priority for the capacity of the bus.
